Here’s a rub recipe from Lyle Schipper that is primarily for Prime Rib, but will work just as well with Elk or Venison.   

1 TBS.  Black pepper 

1 TBS  Salt 

1 TBS  Meat tenderizer ( Adolf’s) 

3 TBS  Season Salt 

2 TBS…Onion (powdered or flakes) 

2 TBS…Garlic Powder 

4 TBS…Paprika 

Approx. 2 TBS each of Rosemary and Thyme leaves 

Mix the above dry ingredients well. Spray the meat with PAM (to help the rub stick) and apply rub.   

Cooking tip:  A 5 pound Prime Rib, baked for 3 hours at 250 degrees will come out Med. You may need to adjust the baking time for leaner wild meat.
