Glazed Game Bird

Looking for a different way to prepare pheasant, turkey or ruffed
grouse? This recipe for fried game bird with an orange-honey glaze has
gotten rave reviews from everyone who¹s tried it.
Start by cutting the skinned breast meat into one-inch chunks and
marinating in buttermilk overnight.
Next, prepare seasoned flour by combining:
1 cup of flour
1 tablespoon chopped parsley
1 tablespoon chopped chives
Salt and pepper
Chili powder
Garlic salt
It isn¹t necessary to limit yourself to those herbs and seasonings. You
can add whatever ingredients you like, including Cajun seasoning if you
prefer your food on the spicy side. Place the seasoned flour in a small
paper bag.
In another bowl, combine and stir:
1/2 cup buttermilk
1 egg
Salt and pepper
Place one cup of flour in yet another bowl (for dusting).
Remove the meat from the refrigerator and discard the buttermilk.
Season the meat with salt and pepper and some lemon-pepper.
In a large non-stick skillet, pour enough vegetable oil (corn oil works
well) to cover about half an inch. Heat to 300 degrees and add two
tablespoons of butter.
Dust the meat chunks in the flour, dip them in the egg-wash and then
place them in the bag with the seasoned flour, shaking until well coated.
Shake off the excess and fry until golden brown on both sides, using a tong
to turn.
To prepare the glaze, combine in a small saucepan:
1/2 cup fresh-squeezed orange juice
1/4 cup honey
2 tablespoons molasses
2 tablespoons of balsamic vinegar
Heat, stirring occasionally, until the glaze reduces and thickens
slightly. When the glaze thickens, stir in some chili powder. Adjust the
seasonings to taste.
When the meat is fried to a golden brown on both sides, place in a
190-degree oven for a few minutes while the glaze reduces. Remove the meat
from the oven and brush on the glaze.
Serve the fried meat chunks over a bed of white rice along with sautéed
bell peppers.
